Cut paneer into sturdy medium cubes/slices. Pat dry with a paper towel to remove excess moisture.
Create marinade: mix yogurt, turmeric, red chili powder, garam masala, and salt. Coat paneer well, let sit 15-20 mins for flavor infusion.
Dice the vegetables like bell peppers, onions, and tomatoes into chunks or slices, as per your preference. Keep them aside for later use.
Heat oil/ghee in a pan on medium heat. Cook marinated paneer until golden brown on both sides. Remove from pan and set aside.
Add more oil if required in the same pan. Sauté diced vegetables until slightly tender yet crisp. Season with salt, pepper, or additional spices to tast
Reintroduce cooked paneer to the pan with vegetables. Gently mix to combine flavors. Cook briefly to meld tastes together.
Turn off the heat and garnish the paneer roastie with freshly chopped coriander leaves or any preferred herbs. Serve it hot as a protein-rich main course or as a side dish with bread, rice, or roti.
